6 lbs. large red-skinned potatoes
1Z2 C. olive oil
10 garlic cloves, minced
13Z4 tsp. salt
3Z4 tsp. coarsely ground black pepper
Coat your baking dish with olive oil. Cook whole potatoes in large
pot of
boiling water until tender...about 35 minutes. Drain. Arrange
potatoes in
prepared baking dish, side-by-side. ³Smash² each potato in the
center with a
fork. Make a hole, about 1 inch deep.
In a separate bowl, whisk together olive oil, garlic, salt and
pepper.
Drizzle over potatoes, making sure to fill the ³smashed² cavities.
Preheat oven to 400° F. Bake potatoes until crisp and brown on top
for about
1 hour and 10 minutes. If potatoes seem dry, baste with additional
oil. |
