2 slightly beaten egg yokes
1 C. canned solid packed pumpkin
1¼2 C. packed brown sugar
1 tsp. ground cinnamon
1¼2 tsp. ground nutmeg
4 C. whole wheat bread cubes
1¼2 C. pitted dates, diced
1¼4 C. chopped pecans
2 stiffly beaten egg whites
Combine egg yolks, pumpkin, brown sugar, cinnamon and nutmeg in a large bowl. Stir in milk. Fold in bread cubes, dates and pecans. Fold in stiffly beaten egg whites. Turn mixture into a rectangular baking dish. Bake in a 325° F. oven 45 to 50 minutes. Serve warm with whipped cream. Garnish with a sprinkle of nutmeg or cinnamon.
