Back SALMON SALAD WITH YOGURT DRESSING print this page

1 C. elbow macaroni
8 oz. fresh cooked salmon, boned and flaked or
7 oz. can salmon, boned and flaked
1¼2 small carrot, peeled and grated
1¼4 C. lowfat yogurt
2 Tbsp. regular mayonnaise
2 Tbsp. finely chopped onion
1 C. fresh spinach leaves, washed and torn into very
fine pieces
Cook macaroni until tender. Drain and set aside.
In a medium bowl, combine macaroni, salmon
and carrot.
In a separate bowl, combine yogurt, mayo, onion and spinach. Spoon over macaroni mixture and gently mix until thoroughly combined. Can be served over lettuce or just by itself.
