1 large head romaine lettuce, finely chopped
4 medium plum tomatoes, finely chopped
1 large cucumber, peeled and finely chopped
1¼2 C. chopped red onion
1¼4 C. olive oil
3 Tbsp. red wine vinegar
1 C. crumbled Feta cheese
1¼2 C. pitted Kalamata olives
Combine first 4 ingredients in large bowl. Drizzle oil and vinegar
over. Season to taste. Toss to coat. Mix
in Feta cheese and olives. Serve with your favorite crusty bread. |
