Back CRANBERRY – WALNUT PIE print this page

1 pie crust, store bought is OK
3¼4 C. golden brown sugar
2 large eggs
3¼4 C. pure maple syrup
2 Tbsp. unsalted butter, melted
1 tsp. vanilla extract
2 C. walnuts, coarsely chopped
1 C. fresh cranberries, coarsely chopped
Beat sugar and eggs in large bowl. Whisk in maple syrup, butter and vanilla.
Stir in walnuts and cranberries. Pour filling into frozen crust.
Bake pie in a preheated oven at 400° F. for 10 minutes. Reduce oven
temperature to 350° F. Bake until filling is set, about 35 minutes longer.
Transfer pie to rack to cool. Serve with whipped cream or vanilla ice cream.
This is a rich pie and I recommend something to cut its richness.
