GREEN BEAN, WALNUT AND FETA SALAD |

1 1¼2 pound fresh green beans, cut in half crosswise
3¼4 C. olive oil
1¼4 C. white vinegar
1¼2 tsp. minced garlic
1¼4 tsp. freshly ground pepper
1 C. chopped toasted walnuts
1 C. diced red onion
1 C. crumbled Feta cheese
Bring 4 quarts salted water to boil in 6-qt. saucepan. Add beans and cook
until crisp and tender, about 4 minutes. Drain well; immediately plunge into
ice water to stop cooking process. Drain beans and pat dry.
Combine oil, vinegar, garlic and pepper in processor and blend. Arrange beans
in shallow glass serving bowl. Sprinkle with nuts, onion and cheese. Just
before
serving, pour dressing over beans and toss thoroughly.
