ONION, WHITE BEAN AND TOMATO SALAD |

3 cans white beans, rinsed and drained
8 Tbsp. olive oil
1 large red onion, cut into bite-size cubes
1 large white onion, cut into bite-size cubes
4 garlic cloves, thinly sliced
4 large plum tomatoes, cubed
1/4 C. FRESH lemon juice, less if concentrate is used
1/4 C. fresh basil
Heat 3 tablespoons oil in large skillet over medium fire. Add onions and
garlic and cook until vegetables are brown and tender, stirring occasionally.
Add onions to beans which have already been rinsed and drained. Cool.
Add
3 tablespoons oil, tomatoes, lemon juice and basil. Toss gently. Season
with salt and pepper. Serve at room temperature.
