noodle kugel

1 lb. medium noodles
5 eggs, beaten
1/8 C. fresh-squeezed lemon juice and grated rind from 1 lemon
1 tsp. vanilla
1 1/2 C. sugar
1/2 C. golden raisins
3/4 C. finely chopped pineapple chunks (if canned, drain thoroughly)
1 C. water
1/2 tsp. salt
shortening for greasing pan
Preheat oven to 350°. Fill a large pot three-quarters full with water and bring to a rapid boil. Toss in noodles, and boil 5-7 minutes until al dente. Rinse in cool water, drain and set aside. Mix all other ingredients except shortening in a large bowl.. Pour in noodles and combine thoroughly. Pour mixture into a greased baking pan and bake for 1 hour 15 minutes, or until top is golden brown. Serve hot.
