Peel, boil and mash 6 medium sized sweet potatoes. To every 2 cups
add 2 tablespoons butter, 1/2 teaspoon salt and a little hot milk or cream. Beat until
light and pile on hot dish.
Glazed sweet potatoes
6 medium sized potatoes
1/2 C. brown sugar
2 Tbsp. water
4 Tbsp butter
Wash and pare potatoes. Cook 10 minutes in boiling, salted water. Drain, cut in halves,
lengthwise, and put in a buttered pan. Make a syrup by boiling 3 minutes, the sugar and
water; add butter. Brush potatoes, baste with syrup, bake slowly until tender; or broil. |
