SPINACH AND GARLIC DIP
1 1/2 tsp. plus 2 tbsp. olive oil
2 tsp. finely chopped garlic
8 C. (packed) fresh spinach
1/2 C. chopped green onions
1 C. lowfat sour cream
1 tsp. fresh lemon juice

Heat 1-1/2 tsp. oil in large nonstick pan. Add garlic,
sauté 10 seconds. Add spinach and sauté until wilted
and tender, about 2 minutes. Cool.Puree spinach and
green onions in processor. Transfer to medium bowl.
Mix in sour cream and lemon juice. Season with salt
and pepper to taste. Chill and serve with vegetables,
crisp pita triangles, or chips of choice.
