1/4 C. olive oil.
5 Tbsp. whole grain Dijon mustard
3 Tbsp. chopped fresh dill
2 Tbsp. white wine vinegar
2 Tbsp. low fat mayonnaise
1 1/2 lb. medium sized red-skinned potatoes,
cut into wedges
1/2 C. chopped red onion
Whisk first five ingredients in small bowl to blend.
Steam potatoes just until tender. Drain and transfer
to a large bowl. Add 3 Tbsp. of dressing and toss.
Cool and then add balance of dressing and red onion.
Toss to coat. Season to taste with pepper, garlic, etc.
Its great tasting and still mindful of fat calories!
