6 ounces penne
8 ounces fresh snow peas, cut into 1/2 inch pieces
1/3 C. lowfat Italian dressing
1 C. shredded radicchio
4 C. shredded fresh spinach
1/2 C. blue cheese
Cook pasta. Add snow peas to boiling pasta during last 5 minutes
of cooking. Rinse and drain well. In a large bowl combine
dressing, pasta and radicchio. Toss well. Serve on a bed of fresh
spinach, topped with a little blue cheese. Be careful not to
overdo with the cheese. It can be very powerful!
