PEAR and APPLE MUFFINS
1-3/4 C. flour
1 Tbsp. baking powder
2 Tsp. cinnamon
1 Tsp. ground ginger
4 pear halves, peeled
1/2 C. margarine, melted
3/4 C. sugar
2 large eggs
1/3 C. milk (low fat OK)
1/2 C. applesauce

Spray 12 place muffin tin with vegetable spray and set aside.
Preheat oven to 400° F. Combine flour, baking powder,
cinnamon and ginger in mixing bowl. Set aside. Break pears
into bite-size pieces. Set aside. Combine margarine and sugar
in mixing bowl and beat until blended. Add eggs and blend.
Alternately add flour mixture and milk, half at a time, until
both are blended. Add pear chunks and applesauce; blend.
Spoon batter into muffin tin…about 2/3 full. Bake for about
30 minutes or until tester comes out clean.
