| (Any bean of your choice can be
used...garbanzo, black, etc.) 1 pound pasta ( You can use any pasta of your choice.) 1 pound broccoli, florets 2 tsp. olive oil 1 C. bean of choice 1 C. vegetable broth (Can be prepared from boullion cubes.) 3 cloves garlic, crushed 3 Tbsp. pesto (You can purchase prepared pesto at your market.) 4 Tbsp. freshly grated Parmesan cheese Fresh ground pepper, to taste Prepare pasta according to directions. Add broccoli to same pot at end of boiling time. Drain. Heat oil in large skillet. Add beans, broth, garlic and bring to boil. Let simmer until sauce begins to thicken, about 5 minutes. Stir in pesto and cheese. Add pasta and broccoli. Toss well and and serve with a garden salad and some thick italian bread. (Thanks to WOMANS WORLD for this great idea.) |
