DELICATA SQUASH
1/4 cup finely chopped walnuts
2 tbsp. olive oil
1 square of tofu
1/2 cup chopped onion
4 large cloves of garlic
1/4 teaspoon basil
1/2 teaspoon tarragon
1 teaspoon thyme
1 tbsp. tahini (sesame butter)
1 package of crushed Ritz crackers
2 teaspoons of tamari
1 tbsp. chopped fresh parsley
dash of cayenne to taste
(You may want to increase spices depending on what you like.)

Preheat oven to 375°. Roast chopped walnuts in oven 4 minutes.
Drain and press excess water out of tofu and allow to sit
wrapped in a paper towel for 10 minutes or so.
Sauté oil, onion, garlic, then add spices.
Mash tofu in bowl, and add cracker crumbs, tahini, tamari,
walnuts, parsley, salt, and cayenne. Stuff Delicata squash, and
cover in a baking dish. Bake at 375°, for about 40 minutes or
until squash is tender.
This recipe is also good with some steamed spinach
added to the mixture.
