1 envelope unflavored gelatin
1/4 C. water
1 C. evaporated skim milk
1 tsp. chocolate extract
1 tsp. unsweetened cocoa
1/2 tsp. vanilla
5 tsp. sugar (artificial sweetener can be used)
In a small pot, sprinkle gelatin over water. Let soften a few
minutes. Heat, stirring frequently, over low heat until gelatin
is dissolved.In a blender container, combine remaining
ingredients. Add gelatin. Blend until smooth. Pour into a bowl
and chill until set, about 20-30 minutes.Beat chilled pudding on
high speed of an electric mixer until creamy. Refrigerate until
ready to serve.
(You might want to top off with whipped cream and chocolate shavings.)
