CHICKEN AIOLI SALAD
3/4 C. mayonnaise (light is OK)
1 Tbsp. Dijon mustard
1 Tbsp. lemon juice
2 medium garlic cloves, minced
2 C. cooked chicken, cut into 2-inch strips
1/4 lb. frozen or fresh green beans, cut and blanched
1 medium red pepper, cut into strips
1/2 C. carrot strips
2 French bread rolls, split
4 Boston lettuce leaves

Combine one half cup of mayonnaise, mustard, juice and garlic.
Mix well. Add chicken, green beans, red pepper,and carrot sticks.
Mix lightly. For each serving, spread one bread half with one
tablespoon of the remaining mayonnaise. Top each with a
lettuce leaf and equal amounts of salad. Serves four.
