Back SPARKLING RASPBERRY LEMONADE print this page

1 12 oz. package frozen unsweetened raspberries
1 C. sugar
1¼2 C. water
1 1¼2 Tbsp. grated lemon peel
1 C. fresh lemon juice
1 1-liter bottle chilled club soda
Ice cubes
Combine frozen raspberries, sugar and 1/2 cup water in medium saucepan. Stir over low heat until sugar dissolves and berries thaw. Increase heat and boil 3 minutes. Strain raspberry mixture into bowl, pressing on berries to remove as much juice as possible. Discard solids. Mix lemon peel into raspberry “syrup” and chill.
Stir raspberry syrup, lemon juice and club soda in large pitcher to blend. Fill 6 glasses with ice cubes and this delicious raspberry lemonade. Garnish with fresh raspberries and lemon slices.
