1/2 16oz. package elbow macaroni
1 16-oz. container low-fat cottage cheese
2 Tbsp. all-purpose flour
2 C. skim milk
1 4oz. package shredded sharp Cheddar cheese
1/4 tsp. ground black pepper
1/4 tsp. ground nutmeg
1/4 C. grated Parmesan cheese
Prepare macaroni according to label directions. Drain. Preheat oven to
375° F. Prepare shallow, broiler-safe casserole pan. In food processor
blend cottage cheese until smooth. In 2-quart saucepan, mix flour with
1/4 C. milk, until smooth. Slowly stir in remaining cups milk until
blended. Cook over medium heat until mixture just boils and thickens
slightly, stirring frequently. Remove saucepan from heat; stir in
cottage cheese, Cheddar cheese, pepper and nutmeg. Place macaroni in
casserole; cover with cheese sauce. Bake, uncovered for 20 minutes.
Place casserole in broiler at closest position to source of heat; broil
2 to 3 minutes until top is
golden brown.
