1/2 C. plus 2/3 C. sugar
3/4 C. chopped toasted walnuts
3/4 tsp. cardamom
1 tsp. allspice
2 C. flour
2 tsp. baking powder
1/2 tsp. baking soda
2 large eggs
1/2 C lowfat yogurt
1/4 C. margarine, melted
1 1/2 C. grated, peeled Granny Smith apple
Preheat oven to 375°. Spray 12 standard muffin cups with
non-stick spray. Mix 1/2 C. sugar, 1/4 C. walnuts, 1/4 tsp.
allspice and 1/4 tsp. cardamom in small bowl; set aside to
use for topping.Mix flour, baking powder, baking soda,
remaining 2/3 C. sugar, 3/4 tsp. allspice and 1/2 tsp.
cardamom in large bowl. Add eggs, yogurt and margarine.
Blend. Mix apple into mixture. Add 1/2 C. nuts. Spoon batter
into muffin cups. Sprinkle topping over muffins.
Bake about 22 minutes or until tester comes out clean.
