11¼4 C. pecan halves
31¼2 C. flour
11¼4 C. sugar
1 C. golden raisins
2 tsp. baking powder
11¼2 tsp. ground allspice
1¼2 tsp. baking soda
4 large eggs
1 C. butter, melted
1 C. canned solid pack pumpkin
1¼4 C. unsweetened apple juice
Heat oven to 350°F.. Prepare two 81/4 x 41/2 x 21/2 inch loaf pans. Set aside 1/4 C. pecan halves; chop remaining nuts. In large bowl combine flour, sugar, raisins, chopped pecans, baking powder, allspice and baking soda. Add eggs, melted butter, pumpkin and apple juice and mix well. Pour batter into prepared pans and bake 50 to 55 minutes until tester comes out clean. Freezes great. P.S. Add 1 cup of chocolate morsels to the batter and you really have a yummy treat!
