1¼2 12-oz. box fettuccine noodles
1¼2 12-oz. box spinach fettuccine noodles
2 Tbsp. butter/margarine
1 1¼4 C. half-and-half or light cream
1 C. grated Mozzarella cheese
1¼2 C. grated Fontina cheese
1¼2 C. grated Provolone cheese
1¼4 C. grated Romano cheese
1¼4 C. chopped parsley
1¼2 tsp black pepper
Cook fettuccine in large pot of boiling water, drain and return to pot. Meanwhile, over low heat, melt butter; stir in half-and-half, Mozzarella, Fontina, Provolone and Romano cheeses. Cook, stirring constantly until cheeses are melted. Add cheeses, parsley and pepper to fettuccine in pot. Toss and serve immediately. Sprinkle lightly with grated cheese of your choice, if desired.
