1 C. unsalted butter, melted
2/3 C. sugar
2/3 C. golden brown sugar
2 large eggs
1 1/2 C. flour
4 tsp. baking powder
2 C. old-fashioned oats
2/3 C. raisins
Preheat oven to 350° F. Prepare two baking sheets with nonstick spray
coating. With electric mixer, beat butter and both sugars in large bowl.
Beat in eggs. Add flour and baking powder to bowl. Mix well. Stir in oats and
raisins. Place about six mounds of cookie dough on each cookie sheet. In
all, there will be twenty four mounds, twenty four cookies. Bake until
cookies are light golden, about 15 minutes. Cool cookies and store in air
tight container. |
