APPLE, PEAR AND CRANBERRY COBBLER |

For Filling:
5 cooking apples, peeled, cored and sliced
5 pears, peeled, cored and sliced
1/4 C. dried cranberries
2/3 C. brown sugar
1 Tbsp. grated fresh ginger
1 Tbsp. flour
1 tsp. cinnamon
For Topping:
3 C. white flour
2 Tbsp. baking powder
1 Tbsp. sugar
1/2 C. margarine
1 egg
1C. plus 2 Tbsp. cold milk
Preheat oven to 400°. (375° if you're using a glass pan.) In a bowl, combine the sliced
apples and pears, cranberries, sugar, ginger, flour and cinnamon. Prepare a 10-inch square
baking pan. Transfer fruit mixture into pan and set aside.
In a separate 2-quart mixing bowl, combine flour, baking powder and sugar. Cut the
margarine into small pieces and then cut it into the flour mixture until it is crumbly.
Mix in the egg and milk. The mixture should look like soft biscuit dough. Flour a counter
surface with a few tablespoons of flour and knead the dough on it for a minute.
Tear the dough into small pieces, about 1 1/2 inches square, and place the pieces in a
"cobblestone" fashion on top of the fruit mixture. It should cover the mixture.
Bake on the medium rack for 45 minutes. The dough should be lightly browned. Serve warm or
at room temperature. P.S. This is worth the extra effort. |
