2 1/2 C. sugar
1 C. vegetable oil
4 large eggs
1 C. pumpkin (2 C.)
1 Tbsp. grated orange peel
3 C. flour
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. ground allspice
1/8 tsp. ground clove
2/3 C. orange juice
In a large bowl combine the sugar, oil and eggs. Add the pumpkin and the orange peel. To
this you should next add all the dry ingredients. Mix well. Once everything is well
blended add the orange juice. Mix well and pour batter into prepared tube pan. You will
need a 12 cup pan so make sure it’s large enough. Bake for 50-55 minutes at 350°.
Can be sprinkled with confectioner’s sugar when ready to serve.
