Lemon-Honey Breasts
4 chicken breasts, skin removed
1 small onion, chopped
6 T. lemon juice
2 T. oil
2 T. honey
1 T. soy sauce
Prepare marinade by adding last five ingredients together and mixing in a small bowl. Place breasts in baking pan. Pour 1/2 marinade over breasts and let sit for about 1 hour at room temperature. Boil remaining mixture until it thickens. Once breasts are finished marinating, place breasts on broiling pan and cover with thickened marinade. Broil on both sides making sure to coat with marinade. It’s a bit of summer for fall!
Yam pudding
2 large cans yams, cut up and well drained
1/4 C. sugar
3 large eggs
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1/2 C. non-dairy creamer (Coffee Rich etc.)
1/4 C. orange juice
2 T. unsalted margarine, melted
Preheat oven to 350°. Prepare glass baking dish with Pam. In a large bowl beat yams and sugar until smooth. Beat in eggs, one at a time. Add spices, non-dairy creamer, orange juice and margarine. Pour into baking dish. Bake for about 1 hour and 15 minutes until pudding is puffy. Test center to make sure it is solid. Finish off with marshmallows on the top. Stick in the oven for a few minutes only until toasty brown. Serve warm.
