4 4-ounce fresh flounder fillets, about 1/4
inch thick
1 10-ounce package frozen spinach, thawed, drained completely
1 tsp. olive oil
1 clove garlic, minced
1/2 C. stuffing mix
2 Tbsp. lemon juice
fresh dill
Preheat oven at 350°F.
Cook spinach and drain thoroughly. Cook garlic in olive oil until
tender. Add spinach, 1 tsp. lemon juice, stuffing and dill to garlic.
You may need to add a little water if mixture is too dry. Place
fillet flat on countertop and spoon about 2 Tbsp. of mixture on
one end of fish. Roll up fillet and place in prepared baking dish,
seam side down. Brush rolls with remaining lemon juice, season
with pepper, paprika and dill.
Bake for about 20 minutes. It's ready to serve!
