FRUIT COMPOTE
1/2 canned, sliced peaches (unsweetened) with 2 Tbsp.juice
1/2 C. frozen dark sweet cherries (unsweetened)
1/2 C.. sliced pears (unsweetened) with 2 Tbsp. juice
1/2 C. canned pineapple chunks (unsweetened) with 2 Tbsp. juice
sweetener equivalent to 4 tsp. firmly-packed brown sugar
1/2 tsp. vanilla extract
1/4 tsp. maple extract
1/8 tsp. grated lemon peel
1/4 tsp. ground cinnamon
1 Tbsp. plus 1 tsp. cornstarch
1 Tbsp. plus 1 tsp. margarine

Preheat oven to 350°.
Drain fruits, reserving designated amounts of juice. In an oven-proof
casserole, combine fruits, sweetener, extracts, lemon-peel and
cinnamon. Mix well. In a small bowl, combine cornstarch with the
reserved fruit juices. Stir to dissolve. Pour mixture over fruit. Dot
with margarine. Bake uncovered for 15 to 20 minutes, until hot and
bubbly. Serve hot.
