3/4 C. flour
1 1/2 tsp. baking soda
1/2 tsp. cinnamon
1 tsp. vanilla extract
3 tbsp. cognac
1/3 C. sugar
3 tbsp. heavy cream
3 tbsp. milk
3 eggs
3/4 C. unsalted butter, melted
3/4 C. small chocolate chips
Preheat oven to 350° degrees. Butter and sugarcoat a 3"x 9"
loaf pan; set aside. Combine the flour, baking powder,
cinnamon, vanilla extract, cognac, sugar, cream, milk, eggs,
and butter in the bowl of a food processor. Process until
mixture is smooth and creamy. Pour the cake batter into the
pan. Sprinkle the chocolate chips evenly over the top. Be
sure to use the smallest chips available, otherwise they will
settle to the bottom of the pan and cause the cake to stick.
Bake for 30 minutes. Unmold and cool before serving.
