1/4 C. smooth peanut butter
2 Tbsp. minced onion
2 Tbsp. real lemon juice
1 1/2 tsp. soy sauce
1 tsp. minced garlic
1/8 tsp. cayenne
2 Tbsp. fresh parsely, chopped
1 lb. fresh chicken cutlets, cut into 1-inch pieces
Combine first six ingredients thoroughly in food processor.
Add chicken pieces, toss well and chill for 4 to 8 hours.
Remove chicken pieces from sauce and thread through
skewers. Broil for 10 to 15 minutes until just cooked.
Turn them midway and be careful not to burn them.
