1/2 C. vegetable oil
1/4 C. rice vinegar
2 tbsp. sesame oil
1 1/2 tbsp. minced fresh ginger, peeled
2 tsp. soy sauce
6 C. thinly sliced Napa cabbage
6 green onions sliced thinly
6 oz. snow peas, sliced lengthwise
1 large red bell pepper, sliced thinly
1/2 C. roasted peanuts

Whisk first 5 ingredients in medium bowl to blend. Season with
salt and pepper to taste. Mix cabbage and remaining ingredients
in large bowl. Toss with just enough dressing to coat. Save
remaining dressing for use at the table. Can be made about
three hours before serving. Chill well.
