1 C. dried apricots
1 C. sugar
1 C. quick-cooking oats
3/4 C. whole wheat flour
1/4 C. cake flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 C. orange juice concentrate
1 egg
2 Tbsp. oil
1 C. chopped walnuts or pecans
powdered sugar
Preheat oven to 350o degrees. Grease 9x5x3 inch loaf pan. Place
apricots in small saucepan. Cover with water and let simmer about
15 minutes, until apricots are plump. Cool.
Combine sugar and next 6 ingredients in large bowl. Stir in orange
juice concentrate, egg and oil. Mix in walnuts and apricots. Pour
mixture into prepared pan. Bake about 1 hour. Cool about 15 minutes.
Sift powdered sugar over cooled bread.
